Inside the New Tremont Cafe in Collingwood Ontario
Located inside the historic Dorchester Hotel, Tremont Cafe brings a fresh layer of vintage charm to downtown Collingwood. Designed by Interiors by AG with custom millwork by their sister studio, AG Designs, the restaurant blends historic character with a refined, modern edge.
Nestled in the Dorchester Hotel, this project called for a design that would honor the building’s history while standing out along Collingwood’s bustling main street. Interiors by AG shaped the overall concept, layering moody colors with statement wallpaper and bold lighting, while AG Designs built custom woodwork that grounds the space with timeless craftsmanship. Together, they brought the client’s dream of a restaurant that is equal parts sophisticated, welcoming, and distinctly Collingwood to life.

A Palette of Moody Neutrals and Rich Materials
The restaurant’s atmosphere comes alive through a mix of deep tones and tactile finishes. Walls in Benjamin Moore’s Vintage Vogue, a muted green with earthy undertones, set a dramatic backdrop, while Wrought Iron, a softened charcoal-black, grounds the millwork and trim. To balance the darker hues, Revere Pewter, a warm gray with subtle beige notes, softens the palette and ties everything together.

These colors flow seamlessly into the other design choices—brass fixtures from Visual Comfort and Rejuvenation that catch the light, blackened accents that sharpen the edges, statement wallpaper from Fine & Dandy Co., and marble surfaces that lend a touch of refinement. The combination feels classic, with each layer playing off the next to create depth and warmth.

Every corner of Tremont Cafe benefits from the tailored craftsmanship of AG Designs. From the front bar to built-in details throughout, custom millwork provides structure and richness, grounding the design in materials that will age beautifully alongside the historic hotel.


An Atmosphere That Elevates Dining
From the outset, the vision for Tremont Cafe was clear: create a destination that felt as memorable as the food and drinks served within it. The interiors shape the way guests interact with the restaurant, with layered textures, vintage-inspired finishes, and intimate lighting that transform each visit into a lasting moment. Whether it’s a quick appetizer or a leisurely evening over dinner, the space encourages guests to slow down and savor the atmosphere.
