Personally, I think toast is wildly underrated. Somehow it’s been mislabeled as a breakfast-only food, but my summer toast recipes are perfect for lunch, snacks, or even dinner in a pinch. It’s become my meal of choice on Quinn’s weekly hockey night when I’m eating solo and want something elevated but super easy. The key to good toast is starting with a piece of hearty, thick-sliced bread. INGREDIENTS
Fresh of frozen peas
Goat cheese
Fresh mint leaves
Honey
DIRECTIONS
Cook peas in a skillet over low-medium heat until slightly softened and warmed through
Spread toast with goat cheese
Top with peas and mint
Drizzle with honey
